We are on a continuing tear for fast and vegetarian lunches this week!

This one also goes towards improving my wok patina as well as being super speedy. The fresh ingredients included perfect green beans, now showing up nicely in the produce area.  This week so far, they have made it into a pesto pasta, dinner in about 20 minutes,  since I had some pesto in the freezer for just such occasions.

Today, another portion of these beautiful green beans was washed, trimmed & cut into 1-2” lengths to go with fresh corn sliced off the cob minutes before cooking.

My made-ahead ingredient is another of the ready to eat items from Hoda Soy, this time the curry nuggets. These tend to look a little big for me except for where you might be using them in place of chicken, so I un-package them on the cutting board and slice across the group in ½” diagonals.

There — three ingredients! Which meant I had time to complete a batch of coffee ice cream this morning and run it through QA.

curried tofu and green bean lunch for 2

1 package of Hodo Soy curry tofu nuggets (this would also work nicely a tea-braised or smoked tofu)
1 -1½ cups of green beans sliced in short segments
corn from one ear of fresh corn

1-2 Tablespoons of wok oil suitable for high temperature
splash of chinese cooking wine, rice vinegar or vermouth (optional)

Heat up the wok until a drop of water evaporates in one or two seconds, then add oil. Immediately add tofu and stir to heat, cooking 2-3 minutes before adding in green beans.  Continue stirring another  3 minutes, then add corn. Cook one more minute until green beans are starting to show a little browning.  Add a splash of cooking wine and stirring again  for a moment.

Serve hot, with a dollop of chutney and yougurt if desired.  Serves two

note: doing a couple of stir fry recipes a week is reintroducing my wok skills, and renewing the patina on my very old wok, a gift from nearly 40 years ago.
