Danish Æbleskivers –
my family’s Cayucas beach house tradition
2 cups buttermilk
2 cups flour
3 eggs, separated
1 teaspoon baking powder
½ teaspoon salt
1 teaspoon baking soda
2 teaspoons sugar
apple or pear sauce
Beat egg yolks. Add sugar, salt and buttermilk; then flour, soda and baking powder that have been sifted together. Last, fold in stiffly beaten egg whites. Place small amount of your favourite vegetable oil in each cup of a Griswold Danish Cake æbleskiver pan or equivalent, and fill 2/3 full of dough.
optional: Place a small teaspoonful of apple sauce with a few drops of batter (to cover).
Cook until bubbles appear, turn carefully [gradually] with skewer and finish baking other side. Serve with butter and maple syrup or jam.
NOTE: avoid spilling jam or apple sauce in cups as this will cause them to become Evil Schemers and stick to the pan. I skip this complication and serve with Apple or Pear sauce at the table instead.
Variation: for savory pancakes, omit sugar or replace it with fresh chopped herbs, and add grated hard or semi-hard cheese (i.e. Asiago, Dry Jack or Parmesan, 2-4 Tablespoons finely shredded).
